Stuff UttapamRecipe | Mini Uttapam Recipe | Schezwan Uttapam Recipe
Ingredients :\
1) Rice Floor - 1/4 cup
2) Soji ( Semolina ) - 1/4 cup
3) Water - As needed
4) Curd - 1/2 cup
5) Oil - As needed
6) Corriander - 1 tpsp ( Chopped )
7) Bread - 3 pieces ( Crumbs )
8) Capsicum - 1 tbps ( Chopped )
9) Onion - 1 tbps ( Chopped )
10) Carrot - 1 tbsp ( Grated )
11) Salt - 1 tsp ( As per taste )
12) Schezwan Sauce - 1 tbsp
13 ) Tomato - 1 tbsp ( chopped )
METHOD :
BATTER PREPARATION :
Take a bowl and add rice flour, soji, salt , coriander leaves and curd,
Mix them well.
Keep adding little water and form thin batter,
Batter should be litter thinner than regular uttapam.
Add bread crumbs when we are going to make stuff uttapam.
After adding bread crumbs, batter will become thick so add little water to make it thin,
Keep it for 10 min,
Now batter is ready.
STUFFING PREPARATION :
Take another bowl and add chopped capsicum, onion, tomato and grated carrot. Add little salt and schezwan sauce. Mix them well. Our stuffing is ready now.
Now put mini uttapam pan on gas with high flame. When it becomes hot, slow down gas flame.
Add little oil into every small round shaped part of pan.
Add batter into small round shapped parts with spoon to form thin layer.
Add stuffing with spoon over them.
Then again pour batter over stuffing to form another thin layer.
Cook it for 2 - 3 min at low flame.
When top layer starts changing colour to little brown , turn all to other side.
Add little oil over round uttapams.
Cook them for 2-3 min till they form light golden brown colour.
Now stuff uttapam is ready.
Take them in serving plate.
Serve it with Schezwan sauce / Coconut chutney / Tomato Catch up
