METHOD
Wash all bhindies and dry them properly with cloth. TAke one bhindi and cut tail and head part. Put cut at center vertically, but not till end. Create cavity in bhindi with knife and check for any impurities if any. Cut all bhindies in same way.
Preparation for Stuffing
Put a pan on gas with high flame. Add whole coriander seeds, 1 tsp jeera and funnel seeds. Roast them for 2 min at low flame.Take them out in a bowl.
Put a pan on gas with low flame. Add besan and roast it for 2 min. Now transfer it to roasted masala bowl and mix them well. Add garam masala, red chilly powder, asafoetida, black salt, turmeric powder, green chilly- garlic & ginger paste, and roasted peanuts. Take them into mixer jar and grind them properly to form powder. Tranfer it to another bowl. Add salt and lemon juice and chopped coriander leaves. Mix them properly.
Stuffing is ready now.
Take cut ladyfinger and fill cut cavity with stuffing. Apply light pressure so that stuffing stick to it properly. Prepare all ladyfinger in same way.
Put a pan on gas high flame and add 3 tbsp oil. When oil is hot add 1 tsp jeera, ajwain, and asafoetida. Then add all stuffed bhindies. Bring down gas to low flame. put lid over it and fry them for 2 min. After 2 min, open the lid and stir them slowly. Fry them properly for 5-6 minutes by keep stirring at intervals of 2 min so that they dont stick to bottom of pan. Aftet 5-6 minutes check . If bhindies are fried properly, take them out in serving plate.
Serve it with Roti / Paratha and enjoy delicious taste.2q3
