method
Put a pan on gas with high flame and add 1/2 cup of water. Add spinach for blanch. Cover the lid and put it for 2-3 min for blanching. After 2-3 min check it.If spinach are with dark green colour then they are blanched properly. Let it to cool down to room temperature.
When it is cooled down then make paste by grinding into mixer.
Take a big bowl and add wheat flour, spinach paste, red chilly powder, grinded paneer, salt to taste, ajwain , Suji and smashed potato. Mix them well and form dough. No need of water here. Due to presence of poatato and paneer , there is no need of water .
Kneed it properly for 2-3 min by addling little oil. Make small round pieces and make peda. Take working board and apply oil on surface . Put peda over it and roll it with rolling pan to form round puri of 4 inch. In another method , dust peda with dry wheat flour and then roll it over working board. Prepare all puries by any method suitable to you.
Put a pan on gas with high flame and add oil . When oil is hot then add puri. Press lightly with flat spoon so that puri becomes full fluffy,,,Do this process quickly otherwise it will not be fluffy. Fry it and then transfer to a plate. Fry rest of all puries.
Serve with Pickle and enjoy delicious taste.
