1)  CARROT SMALL- 1 CHOPPED
2) FRENCH BEAN -15 CHOPPED
3) CAULIFLOWER - 1 CUP
4) GREEN PEAS - 1/2 CUP BOILED OR FROZEN
5) POTATO - 1 SMALL
6) CAPSICUM - 1 SMALL
7) CASHUNUT - 1.5 TBSP
8) QUSOORI METHI - 1 TSP
9) CORIANDER SEEDS - 1 TSP
10) SESAME SEEDS - 1 TSP
11) POPPEY SEEDE - 1 TSP
12) COCONUT POWDER - 2 TBSP ( DESICATEF , FRESH , OR DRY)
13) RED CHILLY - 2
14) CINAMIN STICK - 2
15) CLOVES - 2
16) BLACK PEPPER - 6
17) CORIANDER SEEDS - 1 TSP
18) CUMIN SEEDS - 1/2 TSP
Method,
Put a pan on gas with high flame . Add 2 cups of water. Add all vegetable except green peas. Add salt to taste and mix well. Boil it for 10 minutes. After that turn off gas and take out all vegetables from water.
PREPARATION FOR KOLHAPURI MASALA
Put a pan gas with high flame. Add coriander seeds, jeera, sesame seeds, poppey seeds, dry coconut powder and mix them well. Raost for 2 minutes on medium flame. After that take out in mixer jar and grind to make powder. Take it out in a bowl.
Put same pan gas with high flame. Add 1 tsp oil . Add chopped tomato , onion and whole spices, cashew nuts and mix them well. Cook for 2 minutes. When onion color changes to little dark, turn off gas. Let them cool down . Then take them in mixer jar and grind to make paste.
Put a pan gas with high flame and add 1/4 cup of oil. When oil becomes hot, add boiled vegetable and fry for 2-3 minutes. Take them out in a plate.
Use same pan and add left over oil in it. When oil becomes hot, add ginger-garlic paste. Fry for 2 minutes so that raw smell is removed. After 2 minutes bring down gas flame to low Add turmeric powder, red chilly powder and gravy. with 1 cup of water Mix well. Bring up gas flame to high. Add Kolhapuri masala and salt to taste.Mix well.
When gravy starts boiling, add fried vegetables and green peas. Mix them well. Close lid and cook for 5 minutes. Check after 5 minutes, if oil starts separting from pan then Sabzi is ready. Turn off gas. Transfer it to serving bowl.
Serve it with Roti / Partha / Naan / Pulav / Biriyani and enjoy delicious taste.
